i love eggs, but i love all of the egg. when i scramble, i scramble both parts or i suppose i wouldn’t be opposed to scrambling just the whites. but what happens when you have leftover yolks? when i make hoards of macaroons for Valentine’s Day (did you order yours?!), i am going to have a bunch of yolks. so i’ve been thinking about what i’m going to do with them.
1. lemon curd (of course) was my first thought.
3. creme brulee
and the list goes on like this. cremes, custards, cakes, sauces, mousse, ice creams. in an effort to save my waistline, i might just feed the extras to the dog.
