after a week in the woods, i was ready a delicious meal made with freshies from the garden, so this morning i attempted baked eggs.
2 tablespoons fresh herbs (i used dill, parsley, oregano, basil, mint, thyme, and a sage leaf–overboard? i think not!)
1 clove garlic
cheese of your liking (phil had parm and i had chevre)
1 tablespoon butter, divided
a few cherry tomatoes, halved
2 splashes of cream or milk
salt and pepper to taste
preheat the broiler. chop garlic and divide between two medium-sized ramekins. add a 1/2 tablespoon butter to each. in two separate bowls (something other than the ramekins), divide chopped herbs and tomatoes. add cheese, eggs (gently as to not crack the yolks), cream or milk, salt and pepper to the herbs and tomatoes. have all this ready before cooking the butter and garlic.
place the butter and garlic in the oven. broil until butter is bubbling. remove from oven and add egg mixture. return to broiler and cook for 10 minutes. enjoy with toast or fresh greens.
