thai pork lettuce wraps

sunday night, i went to a thai potluck and WOW, the variety of flavors and colors left me inspired. i made deep fried rice (recipe coming soon) and had leftover ingredients to make thai pork lettuce wraps.  i tweaked a recipe from Food & Wine Magazine.

1 pound pork
1 clove garlic
2 small shallots, diced
3 bird’s eye chilies
juice of 1 lime, plus a few slices for serving
2 tablespoons fish sauce
1 teaspoon palm sugar (you could substitute with brown sugar)
1 teaspoon chili sauce
1 cup mung bean sprouts
1/2 cup cilantro
1/2 cup mint
1/2 cup thai basil
coarsely ground roasted peanuts, for garnish
boston lettuce or romaine

mix pork, garlic and shallots. in separate bowl, mix lime, fish sauce, sugar and chili sauce.  brown pork mixture, then add lime mixture and let sit for 5 minutes.  chop herbs and add herbs and bean sprouts to pork.  serve with peanuts, extra chili sauce, and lime slices and lettuce for wrapping.
