not sure what got into me last night but i was on a mission to create something sweet. years ago i used to babysit for this lovely family during the summer. Meghan, the little girl, and i spent our days looking for new, fun things to get into. one day she said she wanted to make “dump cookies.” i had no idea what she was talking about and she couldn’t tell me what went into them. come to find out dump cookies are kind of like gosinta soup–just “dump” whatever you want into these cookies.
after a little research, i found that these “dump” cookies are also called cowboy cookies. nuts, coconut, oats, chocolate, etc.
they were exactly what my sweet tooth needed, and by the looks of cookie jar, they were exactly what everyone else needed too! this recipe comes from make it naked.
ingredients (this makes a LOT of cookies)
3 cups flour
1 tablespoon baking powder
1 tablespoon baking soda
1 tablespoon cinnamon
1 teaspoon kosher salt
1 1/2 cups butter (3 sticks)
1 1/2 cups granulated sugar
1 1/2 packed light brown sugar
1 tablespoon vanilla
1 bag Ghirardelli chocolate (milk chocolate chips)
3 cups old-fashioned rolled oats
2 cups unsweetened coconut flakes
2 cups chopped walnuts
pre heat oven to 350 degrees. mix flour, baking powder and soda, cinnamon and salt in bowl. set aside. in a stand mixer, beat the butter until creamy. add both sugars and beat until combined. add eggs and vanilla, beat until combined. add flour mixture in small batches. add oats and coconut and beat until combined. remove from mixer stand and add chocolate and nuts using a wooden spoon to mix all ingredients together.
i made small cookies, using a tablespoon to scoop the dough.
line cookie sheets with parchment paper and bake cookies until the edges are browned. 11 minutes.
