when i was growing up, my mom made macaroons every year as holiday gifts for teachers, friends and family. they’re a real crowd pleaser. soft, chewy and quite beautiful.
i got the recipe and couldn’t believe how easy it looked. there are a few important “don’t forget” pieces but otherwise, these treats are less than 45 minutes away.
14 oz sweetened, shredded coconut
1 14-oz can condensed milk, just plan on using 3/4 of the can
1/4 tsp salt
1 tsp vanilla
mix coconut, vanilla and condensed milk together. make sure coconut is coated but not too wet–i don’t use the entire can–only about 3/4th of it. in another bowl, beat egg whites until medium to semi firm peek. this will take some time depending on the strength/speed of your mixing tool. while mixing eggs, add salt. gently fold egg whites into coconut mixture. scoop similar sized balls of mixture onto baking sheet lined with parchment paper (must have parchment paper). put in preheated 325 degree oven for 20-25 minutes. cool on rack and enjoy and share! i just a 1/4 cup scoop and this recipe makes 19 cookies.
