easy marinara sauce

whipped up an easy, fairly quick marinara sauce today in preparation for my ravioli making “class” next weekend!!

In heated olive oil, add 1 onion (diced) and 4 cloves garlic (chopped) until tender–10ish minutes. Add 1 carrot and 1 celery (both chopped) and saute for another 10 minutes.  Add 1 can of diced tomatoes (28-32 oz.) and 1 bay leaf.  Simmer on low for 1 hour.  Use an immersion blender or stand blender to puree the sauce to desired texture.

Tonight I added meatballs but this sauce is a really tasty stand alone treat, too.
